The wine is made from grapes of the Rkatsiteli and Kakhuri green varieties grown in the Mukuzan region. It is prepared by the traditional Kakhuri method in a jug and has a pleasant taste and aroma of white fruits.

Brand History

Gabriel is an Orthodox Christian monk who lived in the 6th century monastery in the Shio cave for twenty-seven years. There he tended the crops and learned to make wine and cheese as well as blacksmithing. After that, he returned to his childhood home and started making traditional, natural wine with the help of his friends. This wine is completely handmade, using the ancient method of fermentation and aging in a buried clay vessel called a kvevri. The wine is unfiltered. Only 177 boxes were produced. A pitcher is a large clay amphora-like vessel, traditionally buried in the ground up to the neck, in which wine is fermented and stored. During the fermentation process, which occurs naturally without the addition of nutrients, the pitcher is sealed with a ceramic lid and then buried in the ground. The wine is left to mature for up to six months before opening the kvevri, and the unfiltered but clear wine is ready for bottling. The Georgian traditional method of making Kvevari wine is included in the list of intangible cultural heritage of UNESCO.
